Van had the unique good fortune to grow up surrounded by every type of food imaginable in New York City. He got his start in the culinary industry working after-school jobs at catering companies and fine dining establishments. He learned quickly to appreciate the world’s culinary delicacies, not just from finicky New Yorkers. His overseas travels included tasting the freshest fish imaginable (it was still moving!) while living in Japan, and becoming a connoisseur of Bangkok street carts, while residing in Thailand.
